These plants are very nutritious but are not staple foods.those aren't weeds, they were (and still are) actively cultivated in europe, and were original brought over as garden crops. They're only weeds here in north america since they grow readily and don't have much competition. You'll mostly find them in areas with old abandoned homesteads, and not in the middle of the mountains.
Hell even my local grocery sells dandelions, and i live in the mid atlantic.
