Unfortunately they're almost entirely private land, so outside of the Tallgrass Prairie National Preserve -- which is also a private/public partnership; welcome to Kansas, where even the public land is private -- there's not much you can see aside from driving through them.
Oklahoma has portions of the Ozarks on the eastern border, so it has that going for it at least.
Missouri is the best state for /out/ in the lower midwest and it's not even close. Kansas Nebraska and Iowa are death, Illinois Indiana and Ohio are like being on life-support.
