I do up to -3 in a 16 foot open canoe with a buddy of mine. they are fun but never worried about death. I'd also say helmets aren't necessary up to there at least.

Fun fact, Sir George Simpson, administrator of HBC in the mid 1800s only hired paddlers who couldn't swim for his personal canoe. He made a point of touring the entirety of Rupert's Land (Western Canada) by canoe. He figured if the paddlers couldn't swim they would make a point of not swamping or wrecking the canoe when running rapids.
