I'd consider a short wheelbase Landrover defender as they don't require much after market modification to make them capable off road vehicles and are surprisingly cheap. All I'd do is slap a few solar panels on the roof to run a fridge, chuck a couple swags in the back with a few extra jerry cans of diesel and we're off.
