It's close enough to magic, how much steel do you actually think gets ablated through normal use? The only thing wearing out knives are the people over sharpening them. Once you have a good edge on your knife, 99% of the time all you need is a ceramic hone and leather strop to maintain it. The only time I even use my diamond plates anymore is remove chips/damage, re-profile, or to bring back an edge someone else has neglected for a very, very long time. So like I said, the only thing wearing out knives is people putting a new edge on them when in reality all that was needed was for the edge to be realigned.
