Something like the Meindl Perfekt (pic related, they look more heavy-duty than they are in use though). Other German/Austrian/Italian shoe manufacturers have similar models. Up to five years ago almost every shoe maker that made mountaineering shoes also offered traditional ones, no it has gotten rather rare.
The sole can be easily replaced and that has to be done every 1-2 years if you wear them all (!) the time for ~50€. It's still worth it.
