it's a good thing tho, the guides are cool and you can decide where to go after you know the general terrain types.
if you want serious hiking, the Israel National Trail is the longest trail, you really get to see the land (tho take spreperations), shorter options to look at are the "sea to sea" trail (3~4 days, mediterranean to the sea of galilee), the Golan trail (4~5 days) and the Beer sheva trail (didn't get a chance to do the Beer Sheva one but the others are awesome).
remember the climate is warm, you'll probaby need more water than you're used to, and less clothing and insulation.
