Hook size is a bit of a meme, just pick one that is appropriate for the size of bait you are using and you'll be set.
Keep in mind, fish, especially smaller fish, will bite baits much larger than you may think. (See the picture, this tiny sunfish bit a Rooster Tail as long as it is.)
Get a pack of 1/16 jigheads first, and if you find them to be too heavy, perhaps 1/32, although that's the lightest I will go.
Bait color is a meme and can basically be boiled down to this formula. Clear water favors bright, natural colors, and murky water favors dark colors. Silver and black patterns, usually named after Shad, make for a good starting point in whatever you fish. Dark green would be a good candidate as well.
