My favorite is ruffed grouse. I don't care much for spruce grouse and try to avoid shooting them for the most part.
We don't have quail, partridge, or pheasant in our area so can't speak to those.
I like to keep it simple. Flour, salt, pan fried hot and fast in a cast iron = super amazing chicken nuggets
