Their best use would be in soup/stew. If you put the skins in a soup bag you can stretch it out to about a month's worth of food. That's like 1 meal made with pumpkin a day along with whatever else you are eating.
Here's a harvest from my garden back in 2017. I was able to pressure can several 100 quart jars of pumpkin. Right now, I have something like 400 quarts of pumpkin, 300 quarts of tomatoes, and a couple hundred quarts of various other things maybe. I've yet to take full stock this season. There's usually very close to 1,000 quarts of canned food on constant rotation. It is enough food to go from harvest to harvest and still have some left over for emergencies, guests, and trade.

You need areas for food processing, food storage, food drying, and equipment storage. That tiny area would be just enough only for food storage for 1-2 people and nothing else. A summer kitchen like that one is really nice though. I have one on my back porch, connected to the house. That way I can still use it in the rain if needed without heating the house up.
