A convex is a continuously curved bevel, which can be achieved by using a soft base, like leather or a mousepad, under your abrasive. You can also use a guided sharpening system like the KME Precision Knife Sharpening System with a curved guiding rod (pic related). Another option is a slack belt grinder.
Any freehand sharpening method is unable to produce a perfect angle and will therefore inevitably result in a slightly convex edge over time. Especially with frequent stropping.
