Sailing is more fun because you have direct control of the several different control surfaces and have to juggle many different factors in your head to get the boat to where you want to go. On small sailboats, the boat is very reactive and there is an element of skill to orient the sail to catch the wind, adjusting the sail to change your speed, adjusting your weight so you don't flip the entire boat over, and special maneuvers to turn your boat or sail upwind.
On large sail ships, it is about LARPing as a 18th century sailor / pirate and having the satisfaction of moving a massive ship around the sea without any electricity or motors.
