1. Hens are easy to have. Just have one male and a lot of female. Have a place with some wood for them and eggs
2. Vegetables depend of how much water do you have. If you have a lot, so you are rich, you could have what you want. My father has a pretty small garden 10m x 10m too much potatoes to eat, too much beans. That it will be a lot and enought for 5 people.
3. Animals, like horses eat too much if your place 20mx20m, 400 m2 or 500m2 it is not enought with natural grass from rain. You could have ducks, hens, but not cows, sheeps or horse in that space in my opinion. Because they eat a lot all day, they need places where rest from sun and water
