Sweet potatoes aren't really potatoes either. But they require a lot of water (+), make a lot of ground cover (+), have little to no dormancy (+), and don't respond well to frost (-). A little experimental breeding, a lot of prayer, and there's potential to develop a new regional specialty.
Or, in the least, a nice edible fixture.
