>>2309553i prefer storage vegetables over preserving. theres tons of fruits and vegetable cultivars that store for months. my ground freezes at the end of october, and i have fresh fruits and vegetables until my garden thaws in may. these tomatoes are giallo a grappoli, they were harvested last august. spaghetti squash and russet burbank potatoes will last over a year if you keep the sprouts pulled. it requires very little work, or energy, and you retain more nutrients
second place is freezing. quick and easy. best for cooked vegetables
third is pickling. i like natural fermentation or i just fridge pickle. canned pickels are too much work and they dont taste better
in fact i hate canning anything. too much work. when i make jam i just make no cook freezer jam. its easier, just mix the fresh fruit and the powder in a plastic tub for a minute, healthier and it tastes way better. no cook raspberry jam is very good
dry a lot of stuff. but its mostly just herbs and lawn mushrooms. no vegetables or fruit
