My pannier setup does keep the center of gravity in a good place, but yes, a single-wheel hitchable trailer makes me think it's doable, having used them on bicycles. You wouldn't be going 'very' fast, and if the guy has customers with regular 'big' bikes, a Postie shouldn't have a prob. One thing coming to mind might be weight-- I'd estimate my bike is pulling about 115-120kg (me+gear), but the 110X is designed for a service load of 130kg.
The "Postie" that Nathan and I have is the Australian Post custom-made "CT110X", which has a few improvements over the Trail110, but you probably don't need to sweat the differences-- they are to make the bike more reliable in their intended Commercial-use context (stronger shocks, CDI, simpler non-dual-range engine, etc.), but there's certainly riders doing long trips on 'lesser' SuperCub bikes (google: sym symba touring/camping/long rides, etc.)
