then i'll press them all between some parchment lined plywood for a bit and slice thinly before packing into a bunch of small mason jars. from there, they'll get a ~140°F water bath before sealing. hopefully i can learn something about progressive aging when i open them later. i might even vacuum seal one to do a side-by-side comparison.
