weatherwool is pretty high end and expensive, but their website has some great reading on wool properties and how it behaves, really interesting stuff if you wanna read into it
there's tons of types, like you said, alpaca, bison, qiviut, cashmere, angora, vicuna, opossum, on and on
generally you'll wanna look at merino or rambouillet merino for wool you can wear without it itching (cashmere and vicuna are high end as well but pricier)
different weaves and blends are a big factor to how it behaves and feels too
generally melton, boiled and felted wool seem to be the main kind that most use for jackets like mackinaw cruisers from pendleton and filson, abrasive but durable and warm, kinda like canvas jackets that you get from carhartt
