Damn that was really good. Sweet like blue gill and flaky like crab. My young kids even came down and tried some when they smelled it frying up, ending up fighting over who got to eat the tail. I’ve caught tons of these guys but never bothered as I thought filleting would be tedious and unproductive. Turns out you just scale, gut, and lop the head off and you’re good to go!
