With a camera, you can use a tool like Hugin to stitch photos together into a panorama. Key here is to meter the exposure across the whole panorama, then set the camera to manual for everything... shutter, aperture, ISO, and white balance.
You'll get best results on a tripod with its pivot mounted directly under the optical axis of the camera... but for distant shots, off-hand will do okay.
Or just use an ultrawide lens and crop the image.
(That's why most DSLRs have the 1/4-20 tripod mount directly under the sensor in the body)
