There are tons of tree species and types of maple trees that give sap that you can make syrup from. There's a, "Plants and Methods for Sugar, Syrup, & Molasses Making," section in the OP pastebin that has a link for like 27 different trees.
>is it just how it's refined?The source and the temperature are the main things. Temperature being the big one. The hotter it gets the thicker the syrup will be and it has a chance of caramelizing in some sections of the boiler which will add flavor and more color.
