i can see the sit on being more tippy, but it also looks way more relaxed in terms of seating position and ease of getting on and off. plus being able to stretch out out and chill
i can imagine with the sit in, it would get old if you were frequently mounting/dismounting. although im not sure if that would even be an issue.
im actually looking at 2 otherwise identical kayaks, only difference being it/on
idk, i have a few months before the ice clears to figure it out
