The only folks who had to rely on their own food supply for a long period were armies, shepherds and perhaps foresters.
If you want to approximate what those brought along then dried, salted or smoked meat/fish and dried peas are going to be your food. You could possible add some other non leafy greens, cabbages and root vegetables to it such as sauerkraut, onions, perhaps a leek, Lentils and any wild fruits and vegetables you'd find in a forest. Larger groups of people (such as armies) would have brought along 'self propelling four footed ration packs'. Your main caloric supplies are probably going to be met with grain products, and since bread doesn't keep well to long you'd best take along some un-milled grain and a hand mill.
