From what I understand, those big saddles aren't what you want to have for long rides. It might seem counterintuitive but something smaller and stiffer is better. The Brooks saddles (especially the B17) are very famous among bike tourers. You need to break them in though.
I'm using pic related right now, it's the one that came with this used bike and it's nothing fancy. Longest bikepacking trip I did was 3 nights. It's not the most comfortable and you feel it after a few days, but it's okay. You definitely get accustomed to the pain with the time. It hurts in the mornings when you get on the saddle but the pain fades away as you ride.
I'm probably gonna upgrade to a Brooks B17 for my weeks-long ride next year.
