I literally turned up to springer with 3 days of food and off I went. Don't think I ever carried more than 4 days. And there were plenty of times I passed up on resupply chances to avoid having to hitch too often.

You will pass right by plenty of ponds and lakes that are right by the trail. A lot of that area would be a massive bitch to bush whack through as the forest is fairly dense. Be honest and realistic with yourself about the fishing before you commit to carrying a rod. If you do carry fishing gear, carry it for pleasure not food.
I'm not from the states, so don't fully know what the deal is with fishing permits and so on. But the AT is high traffic, and the world is full of busy bodies. There is a real chance some idiot will be asking you about permits with the real intention of reporting you if you don't have them. Sadly the outdoor community is great but, like everywhere, there are people looking for a chance to 'do their bit'.
Either way it's a great trail and I had a blast.
