I competed in some silly competitions for a while. Though I never won or got pumpkins big enough to make a boat from, it always was a two or three person job to move them. I allowed a maximum of 2 pumpkins on a plant, most of the time just 1. I dug a hole of a cubic meter for every individual plant, and filled it up with a 1/1 mix of the previously dug up soil and compost. Once the pumpkins passed a certain size they got shaded by an umbrella or reflective cloth, otherwise the outer 'skin' will dry out and eventually burst due to it's rigidity.
There are plenty of guides easily found on google. Combine them with the standard care when cultivating pumpkins and give it a go. It's not that hard to get an impressing size.
