I lived off beef jerky, cashews, and water for a few days and didn't shit for like 5 days straight because my body was using everything.
Beef Jerky and nuts are like super powers, but you should try to have real food, and drink some soda pop.
I'd skip bringing a cook system and just eat in towns and save some snacks for later.
Also, bring an emergency 5 hour energy or redbull.
It's not a joke, if you're in the middle of no where and start drifting off it can save your life.
I've never cycled that far (maybe 80km here and there) but have motorcycle camped quite a bit.

I'd say bring the hammock, a tarp, sleeping pad, pegs, rope, and sleeping bag as far as sleeping stuff goes.
If you can't find trees you can use the tarp (packs very small) as a tent along with the rope and pegs (pack down very small)
