Here is a method I use to harvest from the utility bins, picture taken from a YouTube video. Once your bin is nearly fully composted you push it to the side and create a space for fresh food and bedding. After about a month, most of the worms should have migrated over to the fresh side, allowing you to scoop out fresh castings from the composted side. There will still be a few worms to pick out but it's fat easier than just dumping the whole bin and trying to sort all the worms out.
