If you've never made them and like pickles, doing your own brine can be a wonderful experience. I love pickles and have tried so many and nothing you can buy in the store compares to what you can make at home. This will take a few weeks to fully ferment to a good place, but putting them together only took about 20 minutes. Just clean and cut your veggies, pack them in a sterile jar with your spices and pour over a brine solution about 1/2 tablespoon per cup of water. Stick a stopper in the top so veggies don't pop out and maybe a bag/elastic if you want to contain the smell and put it somewhere cool and dark. Then like Ron Popeil would say, just set it and forget it!
The best part, this 2.5 liter jar of pickles cost me about 25 cents in salt and 5 in spices.
