In regards of towns, when i walked the pilgrim road, there was usually a town only a day apart, sometimes 2. At most, which was while crossing some mountains, it was 4 days. Granted, this along the pilgrim road, not deep into the wilderness where no man has gone.
You can drink from almost any water source in Norway. The water is unusually clean and refreshing. I only carried with me 2l water and never became empty. In rural and urban places, you can also knock at people's houses and ask for water. Nobody will refuse you and be delighted to help.
Though obviously, don't drink from water right next to a highway and railroad track unless you want to shit and puke all night. I never went thirsty despite constant walking in rough terrain in 25-30 celsius (summer was unusually hot and bright last year)
