So they dont have to use a bilge pump and empty out their craft every time they hit a wave or flip. The more air in your boat the less water.

You cant see their legs becuase they are kneeling and have floatbags in their boats. You see how how the plastic of their boat doesnt enclose their body? (Which is why open boaters have to use floatbags) That's what separates canoes from kayaks.
Kneeling and using an oar while kayaking is a real thing, its called C1 and is pic related, but none of the guys in the video posted above are doing C1 kayaking. They are all canoeing.
