If you peel back the bark of a mature Ponderosa pine (with the orange bark), you will notice the distinct spell of the compound vanillin, which is, you guessed it, the same compound found in vanilla extract for baking. Never tried it with an immature Ponderosa (also known as a blackjack pine). I remember reading years ago that the Ponderosa pine is the second most harvested tree in America after the Douglas fir.
