I put a windbreaker over a fleece and call it good. It doesn't get especially cold where I am though, and I tend to run warm on hikes. I like the versatility of being able to throw my fleece in my bag if it's raining but I'm too warm, or just wearing the fleece if I don't want to have a jacket on. I'm sure with more layers something similar is possible in lots of conditions, wearing a big coat hiking seems like it'd suck if you get too warm but the aesthetic is kind of appealing to me desu
