We've been genetically engineering our food for thousands upon thousands of years, selecting for specific traits, crossbreeding species. Heirlooms are just species that are unchanged to 50+ years, or 100+ years depending on who you ask.
The only thing you really wanna stay away from is hybrids. Yeah, you'll get what you expect this year, but if you save seeds, who knows what the fuck you'll end up with next year since their traits are volatile.
