i'd build a small off-grid cabin with really good insulation and a storage shed where i'd keep a bunch of propane tanks, gasoline, generators, water, canned food, batteries, candles, etc.
last summer i barely used half of my propane tank, and my other one is still completely full. i think i'd only have to make a 1-2 trips into town per year. maybe find an economical way to keep some meat refrigerated for a couple weeks. eat vegetarian the rest of the year. maybe have some chickens for eggs.
i'd get me one of those laundry machines that you power with your feet. laundry would be the biggest pain in the ass, and it's the only creature comfort i'd miss. when i was moving, i had to take a couple of what we call "mexican showers". not sure how common that term is elsewhere. "sponge bath" is probably more common, but i don't use a sponge because they're disgusting. you feel pretty clean afterwards, especially if you can change your socks and underwear.
canned and jarred food is surprisingly edible, and low sodium options exist. pasta + marinara for the bulk of calories. low sodium soups. dried fruits and nuts. instant oatmeal and rice. several jars of local honey.
long story short, i had a six month lease on a rental house that ended last month. i work from home, and left probably less than 15 times. i could get that number waaay down. a lot of those trips were unnecessary. that's about 2 trips a month. a lot of them were to re-up on alcohol. i'd probably just call ahead and ask them if they can complete a large order, and see if they could set some boxes aside for transport.
