My Osprel Kestrel 48 is (surprise) 48 liters and it does great for me. Took a solo trip for three days with everything inside my pack--tent (LLBean microlight FS2 [2 man tent]), sleeping bag (ultra compact down bag), clothes, food, tools, cookware, first aid--and I even had a little room for luxuries, like hot dogs and a big ass summer sausage.
Essentially, it heavily depends on how much room your particular gear takes up. Synthetic sleeping bags and coleman-tier tents will usually have to be strapped outside due to bulk and weight while higher-end (twice or three times the price) stuff can pack down to nothing.
