>>369935Take two skinless bass filets. Place them on seperate squares of tin foil (about 12"x12" depending on size of fish). Combine 1-2 tablespoons melted butter and the juice of 1/2 lemon + lemon zest. Fold edges of foil up, creating 4 walls, so liquid can not escape. Spoon the lemon butter evenly onto the filets. Sprinkle finely minced garlic over filets. Add 1 tablespoon of capers over top of each filet. Season with salt and pepper (or Old Bay), very little thyme, and chopped parsley. Fold edges of foil up and over to cover, or wrap, the filet. Throw foil wraps on a baking sheet and bake for 10-15 minutes at about 350 degrees. You could also do this on an open fire. Remove fish, unwrap, and enjoy. They're great served on a bed of rice, fried mushrooms, and onions.
