You can literally saw their crown off and they'll just carry on, sprouting new branches and starting a new crown. These new branches get trimmed periodically (Every 1, 2, or 3 years). This practice will eventually lead to the tree forming a woody mass at the end of the trunk were it was first sawed off, where new branches will sprout from every year. This typical form is what one calls a knotted willow tree.
