White balance is another tricky one to get right.
If you can shoot raw, do that. Then fix white balance in post. Most P&S cameras can't do this (though there are a few), almost every DSLR has the option to shoot raw.
If your camera has a Kelvin white balance, you can use that. Trial and error to get that right though. My Sony does a good job picking a close-enough white balance on auto most of the time.
