Here's a good overview, def make sure you listen to some samples before you buy! For example, some of them use directional microphones which give you a nice stereo separation while others use omni microphones with a small amount of separation, and then some (like the Tascam DR-100) has two omni mics as well as two directional mics and you can use all 4 and choose which recording suits you best later.
There are a lot of differences between the two types of mics and techniques that go beyond simple directionality, but in any case you can get excellent results with some planning and good placement.
