The rivers in Texas are absolutely fucked, because anything with even a modicum of beauty has been raped by tubing companies with shuttle services and lolweedgang college students.
Lakes are still relatively okay outside of holiday season though, and if you find an island in a lake that's a 1-mile or farther paddle out, you can camp on it for a weekend without ever seeing another person, because millenials with selfie-sticks and Mexicans with 9 kids don't have the money for a powerboat and you can't fit a bell tent for glamping onto a kayak.
You just have to find those natural barriers robust enough to keep the crowds out, and then circumvent them. Even when I lived in California, I found beautiful, untouched spots in the canyons, because I took the time to climb to reach them.
And of course, tell no one of the spots you find, and sabotage to the best of your abilities any kayak rental companies that pop up.
