They're very smart animals and can read your body language. If they run up to you just stand your ground, they're just curious about you, don't be afraid to reach out or hand, talk and try to greet them, they are very social animals. Don't show fear or weakness and just keep walking if they follow you.
Just don't even try to fight them, cows weight about half a ton some even more. They will literally crush you
