>>2625645As far as flavor goes, in my opinion it's spoted bass>smallmouth>largemouth. I'm not sure if it's a diet thing or something inherent to the species, but largemouth definitely tend to have a fishier flavor and softer meat than other bass. Not that that's a dealbreaker or anything, the fishiness can be fried off easily enough or balanced with something tart, and the softer texture lends itself well to fishcakes and fish meatballs. Meanwhile spotties and smallies tend to have more standard flaky meat. I'm from the southern Appalachians but far enough north that there's a decent walleye population, and the people here generally consider walleye top tier. I like walleye but consider it a little overrated, personally I prefer bluegill, crappie, and especially shellcrackers.
