FYI, death by poisonous mushroom is painful. It'll shut down your kidneys and liver, you'll think you're getting better for a day or two then you die. There is a treatment diet for it, but if that doesn't work, only organ transplants will save you.
When people get food poisoned from non-poisonous fungi, it is almost always because they ate them when the fungi was older and filled with bacteria. Just eat brand new fungi that doesn't look a bit compromised.
I stick to fungi that does not look like it goes on pizza and is supper easy to identify. Like Chicken-of-the-Woods (pictured) and Giant Puffballs greater than 4 inches across for instance.
