For sharpening you're knoife, the bottom non-glazed rim of a ceramic coffee cup makes a good final step for sharpening. I bought a little Smith's diamond sharpener with a "Coarse" and "Fine" and the fine side probably only gets the edge 8/10 sharp. The coffee mug gets it to 9.5 and is ab easy alternative to going full knoife collector and dropping a bunch on Japanese bricks.
