Do yourself a favor and forget about a fancy knife and spend a lite extra on the pack. Granite Gear is my favorite brand, but Osprey has some decent, heavier packs at a good price.
If you aren't going to be /out/ing in extreme weather the solo Eureka tent is a great option. It's only like a 100 bucks. A bit heavy though.
Don't waste money on a knife, just bring your pocket knife.
Consider trail runners or mid-boots. Avoid water proof because they WILL get wet anyways, and then they'll take forever to dry, exposing you to blisters. I like the Merrell Moab Ventilators. Come in runners and mids. About 120 bucks.
