I just picked about two pounds of little wild apples today. They taste kind of like a Braebern (sweet and tart) with a touch of bitter. What should I do with them? I would like to can them in syrup, is this possible? I have them in the fridge now because I plan to pick more apples in the next few days because I only pick the ripe ones. (Ripe apples pop off the tree very easily, unripe apples have to be pulled off). Should I freeze them? How will that effect the taste and texture?
