You can get away with buying a plot of land like in your pic. The plot will generally seem small on the map, but thats why you go see it in person. You'd be surprised how big it may seem once you start walking around it on foot. Your pic related seems perfectly fine if you want to build a few small ponds. Hunting can be a bit trickier though. What are you looking to hunt? Smaller plots can work well for small game and archery whitetail. A bonus would be if you can find a smaller plot of land that borders some kind of public land (state or blm). You can have access to hundreds or even thousands of acres for hunting/ hiking just by walking across your property. Only thing with bordering public land is that there may be competition from other hunters depending how big is it/ how many public access points there are. Make sure you clearly label your property line with posted signs and maybe a few well placed trail cameras to make sure no one is crossing over to scout/ hunt your land or snag some fish from your pond without permission. I have 15 acres that borders a parcel of less than 100 acres of heavily forested and hilly state land and I love it. I can honestly fuck around on my property or go hunting and not feel bothered/watched by anyone mainly because its fairly rural/ secluded where I am. Theres not much development.
