The barometer is used mostly to detect -changes- in air pressure, which will be shown on a small graph on the digital display and you can use it to tell if it's about to rain.
Thermometer needs to be off the wrist for 10 minutes before it can give you a decent temp reading, cause your body heat will mess it up otherwise.
In situations where you need a compass it doesn't hurt to have a backup one on your watch, but I'd still bring a real one with me. It works fine for 10 weeks or so when calibrated.
Never used the altimeter so I can't speak for it. Didn't find it useful.
In my opinion these watches are chunky and overhyped, I ended up selling mine. Pic related is what I had.
Also about your question regarding analong triple sensors, check youtube to see how they work, they seem like a pain in the ass to use and not very suitable for a watch of this type. The one in your pic is very pretty though.
