I switched from a dome tent to a Go Lite Shangri-La 3. Went from around 8lbs to 5lbs and it just feels more comfortable in general. If I don't take the nest (for winter camping when there aren't any bugs) it's even lighter, more around 2lbs. And unlike a tent you can run a stove inside it, meaning you can have hot food in bad weather. Not my photo but it gives a good impression of it.
Stopped carrying a axe, just carry a hatchet and my big knife/small machete now. 80% of the stuff I burn is just branches collected off the ground and broken to size. Sometimes I won't even bother with the hatchet if it's a short weekend hike.
Reduced my number of spare Glock magazines from 3 to 1, I figure if two magazines aren't going to kill something, another two won't make a difference.

I tried the "Cut off tags, unneeded straps, mesh, etc" thing once. Wasted time and damaged gear for little gain.
Carrying a bunch of dehydrated fruit instead of my usual Mountain House food. It was lighter yeah, but I had to cut the trip short due to bowel problems.
Not carrying a water filter. While it was a notable decrease in weight, it was offset by the amount of time wasted waiting for water to boil or be treated by chemicals, and neither process removes the taste of mud.
